Chilled Guacamole Soup

 

1/2 cup cilantro

 8 scallions

 4 oz. avocado (pared)

2 cloves garlic

1/2 cup buttermilk

1/2 teaspoon curry powder

2 tablespoons lime juice

2 bay leaf

1/8 teaspoon ground cayenne (red) pepper

 

 

Using a food processor, combine the cilantro, scallions and garlic, processing until finely chopped.  Add the avocado and process until smooth.  Next, add the buttermilk, yogurt, lime juice, 1/4 cup water, cayenne pepper and curry powder, again processing until smooth.

 

Transfer to a serving bowl and refrigerate at least 1 hour, or until well chilled

 


Makes 4  1/2-cup ervings

Per serving:  115 calories; 7 g protein; 5 g fat; 12 g carbohydrate;  200 mg calcium; 104 mg sodium; 3mg cholesterol.
